Cooking with Jane: Prawn Risotto

Prawn Risotto Risotto is really easy to make, but it needs your attention as there is a lot of stirring, and don’t try to rush the process either you don’t want undercooked rice, but it’s worth it!. Lovely dish to have at the weekend when we generally have more time on our hands. You could substitute the prawns for mixed seafood if you prefer. Cooking with Jane: Limoncello Tiramisu

This has to be the dessert of the summer (when the sunshine returns!), if you love tiramisu then you will really love this easy limoncello version, great for a summer’s evening in the garden. What you need: feeds 8 or 4 with leftovers 100g caster sugar Zest and juice of 2 lemons And separately the zest and juice of 1 lemon 100ml limoncello liqueur 500g mascarpone cheese 600ml double cream 3 tablespoons of icing sugar 50g lemon curd 200g sponge fingers ( I used the Savioardi vanilla and chocolate version available from Waitrose but the plain ones work just as well)
