Quick Satay Chilli Chicken Kebabs


Great dish to cook on the BBQ during this lovely sunny weather!
What you need: feeds 4
4 chicken breast cut into strips
Olive oil
1 tablespoon runny hunny
Satay sauce ingredients:
100g peanut butter crunchy or smooth
1 clove garlic minced or grated
1 tablespoon sesame oil
2 red chillis finely chopped (remove seeds unless you like it extra hot)
1 teaspoon sugar
1 tablespoon soy sauce
Juice of 1/2 lime
4 tablespoons rice wine vinegar
2 tablespoons cold water
You will also need some skewers and either BBQ or baking sheet if cooking under the grill. You will also need either a stick blender or food processor.


How to make:

1. Put all the satay sauce ingredients into the food processor or bowl and blend until all well combined. Then either put into one bowl if sharing or 4 individual bowls. (Photo 1).
2. Make sure the chicken breast is cut into strips (Photo 2) I find the scissors are useful to do this.
3. In a small bowl mix together the hunny and a couple of tablespoons of olive oil (Photo 3). Thread the chicken onto the skewers and baste each skewer thoroughly with the hunny/oil mixture. (Photo 4).
4. Grill or BBQ the chicken for approximately 8 minutes each side checking that the chicken is thoroughly cooked through. Serve with the sauce some rice and salad or green veg. Enjoy! (Photo 5).
